Veggie Soup

Veggie Soup


3 Leeks
6 Red potatoes
1 lb carrots
1 bundle celery
1/2 c or so cup chopped parsley
1/2" sliced ginger
Juice 1 lime
4 c broth to cover

Spices
Salt 
Pepper
Turmeric
Cumin
Nutmeg

Pressure cook 30 minutes

Blend with immersion blender

Add 2 c coconut milk
